This was another interesting challenge, it was a scorcher of a day and we were set up in a tent right next to the fancy bedouin tent. We were given unusual (semi-prehistoric) gas ovens to work with, which didn’t have any temperature controls – the top shelf was wickedly hot, the middle perfect heat and the bottom was cold. Besides this we managed to send out a perfectly cooked meal and had guests raving about our food for weeks.

Canapes

  • Herbed polenta topped with melting balsamic onions and smoked springbok
  • Blini’s with smoked salmon crème fraiche and caviar
  • Spoons with seared tuna, parmesan mayo and onion sprouts
  • Phyllo baskets with avocado and sweet chilli salsa
  • Fresh oysters with a chilli and lime dressing
  • Tandoori spiced prawn skewers
  • Camambert and walnut puffs with plum chutney
  • Cherry tomato and mozzarella tarts with basil pesto

Mains

  • Pan roasted fillet of beef with wild mushroom jus, baby carrots, asparagus and potato rosti
